Dave’s ‘Pizza My Heart’ Review – Windsor’s Pelican Jo’s
Join me as I travel around Northern Colorado in search of NoCo's Greatest Pie. This week, a stop at Pelican Jo's Pizzeria in Windsor.
In pursuit of Northern Colorado's Greatest Pie, my 'Pizza My Heart' series traveled, not too far from the radio station, to Pelican Jo's in Windsor, in the Water Valley Village off of Eastman Parkway and Water Valley Parkway.
Pelican Jo's is right next to and connected to the Shell convenience store at Water Valley Village; similar to JJ's Wood-Fired Pizza in Fort Collins. At Jo's, they do celebrate Windsor's favorite bird, the pelican. They're everywhere. It's a great touch.
They have seating for about 20-30 people, though not really big tables or booths for a family outing. They have great daily specials, including $2 slices on Tuesdays. My cohort and I, Jake, were there on Wednesday, August 7, 2019, that day's special was about their pizza rolls, so we did the daily special, 2 slices, and a drink for about $6.
The specialty slice of the week was Chicken Alfredo, so I definitely had to have a slice of that, along with a slice of sausage. Service was quick and friendly. Each slice was really good, too.
