We've all been there. You have about a cup of tomato sauce left. It's not enough for the family, and it seems strange to just create a whole spaghetti dinner for yourself. What to do? Make 2nd Generation sauce. It's simple and delicious.

1 can diced peeled tomatoes

1 can tomato paste

1 can 'cheap' tomato sauce

4 cloves garlic

onion

1 tsp garlic salt, basil, oregano, parsley

1/2 tsp cayenne pepper

meat of your choice

Mix all sauces and tomatoes in a saucepan and put on to simmer for about 45 minutes. Prepare your meat. While I  used pork chops in this example, even leftover meats can liven up the sauce, and this includes chicken. Be creative!! To prepare these chops I made a pepper rub out of black, white, cayenne peppers and red pepper flakes. I didn't measure them, but just put a bunch of each in a bowl, mixed it and rubbed it on the outside of the chops before frying. I cooked these until they were rare and allowed the rest of the cooking to be done in the sauce.

Saute onions and garlic in butter and olive oil and add with spices to the sauce. Enjoy!!
