Townsquare Media Northern Colorado is highlighting different local restaurants that are recovering and reopening after the COVID-19 pandemic with a NoCo Restaurant Spotlight series.

Simmer has given south Fort Collins foodies their own spot since opening at the start of 2017.

The chef-driven menu and diverse bar offerings helps the 2519 S. Shields St. eatery live up to its motto of "Drink, Dine & Unwind."

The establishment is run by someone who is no stranger to the restaurant world — owner Steve Lauer has owned more than 60 restaurants in his career, including numerous establishments throughout Northern Colorado.

  • Every Tuesday, all day, you can get a bottle of wine with a menu price under $100 at half price.
  • Wednesday is date night at Simmer from 4:30 pm to close, and you can get half priced 'Bacon-Wrapped Dates' for making any purchase over $10.
  • Tuesday through Friday from 3:30 p.m. to 5:30 p.m. get 'Happy Hour Drinks' with $2 off Draft Beer and Wines by the glass as well as $4 well drinks.
