With a healthier alternative to an ice cream truck, the owner of Black Cat Organic Farm, Erik Skokan, is planting the seeds of hope.

After laying off 30 employees and closing two of his restaurants following the COVID-19 pandemic, Skokan was able to hire his staff back by way of a farm truck, as reported by the Denver Channel.

As a vegan, can I just say that a roaming produce truck is something I never knew I always needed? I hope to see more local businesses adopt this model.

You can find the veggie mobile, known as "Mabel", cruising through her community of Boulder, stopping for anyone who flags her down.

“Everything is different, but the core part [of my business] that feeds my soul is still happening,” said Skokan.
