Cocos of Greeley Expands with New Downtown Windsor Spot

A little cafe and shop opened in Greeley in early 2024; two years later it looks like they can call themselves a Colorado small business success story, with the opening of another location in Downtown Windsor.

What Cafe Opened in Downtown Windsor in the Summer of 2026?

Folks around Windsor are going to be asking "What is Cocos in Windsor" for just a brief amount of time, I suspect; as I think this place will become very, very popular. The woman who owns Cocos Cafe + Shop of Greeley (at St. Michael's Square) took the bold step to add another spot at 205 4th Street in Downtown Windsor, just below The Hearth.

Will Cocos Be the Success Story of Revolving Door Location in Windsor?

It'd be remiss of me not to mention the other small coffee shops, etc., that have opened and later closed at 205 4th Street in Windsor. Most recently (2023-2026) it was home to Shine Cafe which had coffee, wine and cocktails; prior to that, TOAST Coffee + Wine. Some might remember The Tipsy Crickets being inside the spot, for a time.

Esmerelda, the owner, grew up in Fort Morgan and attended UNC. In an interview she talks of how she wanted to open a little place, inspired by places she's visited in her travels to locations like Hawaii and Europe. I can tell you this: 205 4th Street looks completely different than past incarnations; it's bright, and feels very upbeat.

There menu has an "avocado toast" vibe, with yes, avocado toast items, acai bowls, chai teas, etc. When I visited, in mid-July of 2026, the place was very busy. It definitely felt like Cocos would be in Windsor for a long time.
