Waffle Lab of Fort Collins Bought by Fellow Foodies

After over a dozen years of pleasing palates around Fort Collins and Northern Colorado, a popular food truck is moving into its next phase with its third set of owners in six years. Will the theme of this long-standing food truck continue, or will it fade into Fort Collins history?

Running any restaurant can be a challenge, with the hours, staffing, the supply costs; it's not terribly surprising when you hear about a place looking to get out of the game. That was the case in September of 2025, when the owners of The Waffle Lab of Fort Collins announced that after running the business since 2020, they had put it up for sale.

The Waffle Lab has been legendary around Fort Collins; it's one of the area's favorite food truck. While the brick-and-mortar endeavor for The Waffle Lab didn't exactly work out, it was worth the shot at "going big." Seeing that food truck at breweries and festivals around Northern Colorado has always seemed like a great fit. Those Liege waffles (not batter) have been craved by the thousands, since 2012. Finding someone to take over the legendary truck must have been sad as well as overwhelming.

In early November of 2025, The Waffle Lab announced that they'd found new owners, owners of an operation out of Longmont. Sizzlin' Street Bites has been around for a few years, making many stops around Northern Colorado with their bright-colored truck.
