If you aren't a big fan of the super sweet, sweet potato casserole you see on most Thanksgiving tables, try this recipe rescue sweet potato make-over.

  • 4 sweet potatoes, cubed (optional: two white and two orange)
  • 2 Tablespoons pickled jalapenos (chopped)
  • 1 Tablespoon fresh or 1 1/2 Tablespoon dried parsley
  • 1 Tablespoon butter, room temperature
  • 1 Tablespoon paprika
  • 2 Tablespoons olive oil

Toss the cubed sweet potatoes with the olive oil and paprika with a dash of salt and bake at 425 degrees until fork tender. Remove from oven and immediately toss in large bowl with room temp butter, parsley and jalapenos. Serves 4-6
