As I made my way through my college and snow-bum years, I was a cook by trade. Cooking for others is a truly special thing, and I always cherished taking part in helping people enjoy the nutrition that I prepared for them.  I was very lucky to work for an especially special chef named Daryl. He ran the night crew at Beaver Run Resort in 1998-99 (and beyond, I left after 99). It was incredible. We were all skiers and snowboarders and we would be on the mountain every day. At the end of our skiing day, we'd saunter into the slopeside kitchen and start to cook for the hungry tourists. What a life!!

Daryl's education was incredible. He knew everything! And I have to thank him for introducing me to one of the key ingredients in this week's recipe...QUINOA!!
