Here's a pro tip for you. Anytime you make tacos at home, make a little extra filling and whatever your family doesn't eat, mix it all together in a bag and toss it in the fridge overnight. I'll toss whatever chicken, beef or pork I have left with a bit of whatever fresh salsa I make to go with it and let it all ooze together overnight in a Ziplock bag... then... the next day? Heat it up and pour it all on top of some tortilla chips. Add some cheese. Toss it under the broiler for a couple minutes and bam, restaurant quality nachos.

If you want to get a little fancy, take some sour cream in a little bowl or cup and add some lime juice and a splash of water to make it kind of a liquid consistency, then a sprinkle of chipotle pepper powder, and drizzle it over the top of your nachos. Amateurs dip in a dollop of sour cream. If you want to take it up a notch, go with the drizzle for a little goodness in every bite.

You see, it's not that I consider myself a nacho connoisseur by any stretch, but I'm nacho average nacho eater, either. See what I did there?

Neither are the fine folks over at Mashed, a website dedicated to food, recipes and more food. They recently compiled a list of the absolute best nachos in every state, and I have to say, I've never visited the restaurant here in Colorado, nor have I ever come across the food truck before they had a brick and mortar location.

That being said, according to their menu, their nachos consist of a mix of pepper jack and cheddar cheese, pickled jalapeño, pico de gallo, sour cream, guacamole, pinto beans and a drizzle of nacho cheese. You can also add chicken, steak or shrimp for a little extra something something.
