When I make up a recipe, I usually think of a few simple things that all taste good and then just combine them. I didn't want to serve microwaved sweet potatoes with butter again. We've been watching a lot of Diners, Drive-ins and Dives where they fry a lot of food. It all looks so delicious, so I thought, 'Why not fry them too?'

They turned out to be fabulous, fast and easy!

Micro-Fried Sweet Potatoes

2 Sweet Potatoes

1/2 Clove garlic

medium onion

3 tbsp Olive Oil

Microwave sweet potatoes until they are almost soft all the way through(4-6 minutes). Set them aside and chop garlic and onion. To save time, I left them big and chunky. Saute' garlic and onion in olive oil for a few minutes to release the flavor. Slice the sweet potatoes long ways so you have a few sweet potato 'steaks'. Fry them on each side for 7-10 minutes on medium heat, let cool and serve.
