A unique Colorado restaurant, technically a ghost kitchen, serves up Cuban and Puerto Rican dishes from a little place in Loveland.

There are not many Cuban restaurants in Northern Colorado, which is a shame; Cuban flavors are among some of the best. This little business is providing those flavors to the Northern Colorado in a unique way.

I'm the kind of person that loves an interesting restaurant. Here's the story of a Cuban ghost kitchen that you'll find in west Loveland. Don't be worried about what to wear, the restaurant is "take out" only.
Cupcakes and Cuban Cuisine Come Together
The story of Elvira's Cuban Cuisine is tied into cupcakes. It turns out that the owner-operator/Chef of Elvira's is a close friend of the folks that operate Mystic Moon Bakery. Mystic Moon was once known as The Cupcake Gypsies.

The Cupcake Gypsies had a great food truck (they still do) and then opened up a brick-and-mortar location in Downtown Loveland. That didn't work out, and they moved operations to Fort Collins and changed their name to Mystic Moon Bakery.
Cuban Tamales are an item you'll find on Elvira's menu on Wednesdays.

In the end, that didn't work out either and Mystic Moon now operates out of little commissary kitchen off of Eisenhower Boulevard in Loveland, right behind Grand Slam Sports Card and Comics, and they invited Elvira's to join them.
Open Just Two Days, With Eight Menu Items
On Mondays and Wednesdays, Elvira's Cuban Cuisine (named after the owner, Melissa's, grandmother) operates out of Mystic Moon's kitchen, from 11:00 a.m. until 2:00 p.m. A small window, but well worth it.
Many great chefs will tell you that "less is more" when it comes to a restaurant's menu, and that's the case with Elvira's. Monday's menu has four items and Wednesday's has four different items.
