There's nothing better than a national holiday that celebrates food - not that you need an excuse like a national holiday to indulge in some yummy eats (although, a very good excuse to do so).

Did you know that burritos have their own national holiday? Every year, National Burrito Day is celebrated on April 7.

The History Of The Burrito

According to the El Paso Times, during the Mexican Revolution in the early 20th century, there was a man in Juárez, Mexico who would go through neighborhoods by burro, or donkey, selling home-cooked guisados (a.k.a, the Mexican version of a one-pot meal) from clay pots.

He began putting the fillings on a tortilla instead of a plate, and the burrito was born.

"People would say, '¿No anda el señor de los burritos?' — asking where was the man with the burritos," José Luis Hernández, an amateur historian who administers a Facebook group dedicated to Juárez history called "El Juárez de Ayer", told the El Paso Times.

"It's an urban legend... In reality, there isn't precise information, but people take it as the truth."

I mean, it is a holiday, so you might as well celebrate accordingly - and you won't be able to do that without a big ole burrito in hand.

I truly believe that Colorado has some of the best Mexican food of anywhere I've ever lived or visited (granted, I've never been to Mexico - but I digress) - and in Northern Colorado, we are so fortunate to have so many great Mexican restaurants that collectively offer any and every burrito/taco/enchilada/fish dish/meat dish you can dream of (and more).
