
After More Than 30 Years, Something New Will Be Coming to Great Corner in Fort Collins
You have to give credit to any restaurant in Colorado that can last several decades. Los Tarascos in Fort Collins opened on South College in 1995. In 2008, they expanded by moving next door; in the late summer of 2026, they announced they'd be closing.
Why is Los Tarascos Closing in Downtown Fort Collins, Colorado?
Hugo and Maria Caballero have been running (along with family members) Los Tarascos for a long time, and announced on September 8, 2026, that they're ready to retire and leave Los Tarascos behind to get some well-earned rest and relaxation, after one last day on September 23, 2026.
As this chapter comes to an end, we are looking forward to some much needed rest. Our parents are ready to slow down and begin enjoying retirement, while the next generation looks forward to spending more time with family and embracing whatever comes next.
What Will Become of That Great Mural at Los Tarascos?

When word got out that Los Tarascos was closing, many commented that they'd miss the Para Mi Familia "For My Family" mural that the Fort Collins Hispanic Mural Project had installed on the restaurant's north wall in 2023. You'd have to agree that just because Los Tarascos is closing doesn't necessarily mean the mural will have to come down.
From Armando Silva, the artist of the mural:
....Para Mi Familia also asks us to think about our ancestors and our future gente. This is an ofrenda to our community, to our familia. Let this mural be a check point in time and a reminder of why we do what we do."
What Will Be Next for 622 South College Avenue Without Los Tarascos?
I researched what was at 622 South College before Los Tarascos and was reminded that it had been Outpost Sunsport from 1972 until 1996, when the business moved to East Harmony Road.
It's hard to say who/what will be next for that great little corner location; will it be a new restaurant, or will, say, Maya Cove look into adding a location in Downtown?
