If You Love Halloween, You Need to Hit Up This Fort Collins Food Truck
Great food trucks in Colorado must number in the hundreds; how many are "Halloween-Themed," however? There's one that you'll find around Fort Collins that lovers of "spooky fun" need to try.
Dreams of Restaurant Turn Into Food Truck Endeavors in Northern Colorado
A woman that lives in Fort Collins had dreams of opening a "Halloween-Themed" restaurant, but had zero luck in finding an affordable space. So, those dreams had her turn to finding a food truck; one popped up, and became the "Halloween Food Truck" for the Fort Collins area in the summer of 2025.
The Haunted Grounds Cafe used to be an Italian Food Truck; and prior to that, it was a coffee food truck. Coffee items are also a part of The Haunted Ground's menu options.
When you work in the Fort Collins area, as we do here at the radio station, you get used to food trucks being everywhere. They're fun, they bring variety, and just have a "Colorado" feel about them. Having one in the area centered on "spookiness" and Halloween, definitely brings something new.

The Haunting Grounds Cafe food truck is, again, the "For Now" portion of Anna Epstein's goals towards having a "brick-and-mortar" establishment. It started being seen around Fort Collins at the beginning of August 2025, mostly at Peculier Ales, along East Mullerry. I stopped by one afternoon in early September to get an up-close look at the truck.
You can see The Haunted Grounds Cafe's menu is full of "spooky-sounding" items, such as 'Shark Bait.'

It's a fun little truck: It looks like a train's caboose, in a way, and is decked out with all sorts of Halloween items: Skulls, ghosts, gravestones, bats, etc. Nothing too scary, it's OK to bring the kids along. for a "spooky stop."
