Florida-Based Tex-Mex Joint Coming to Colorado and They Look Delicious
Get your taste buds ready, because Floridians have been going berserk over them for about 10 years, and now they are venturing out of Florida to Colorado.
I'll be the first to say that when I think of Florida, "Great Tex-Mex" does not immediately come to mind; but you don't go from not having a sign to expanding out to Colorado without having something worth while. The Centennial state could be in for something muy bueno.
Their mission is "to create the most flavorful and fun Tex-Mex known to man." It seems they've been succeeding fairly well, as they have a dozen locations around the Tampa, Florida area. How confident can they be that they'll be such a hit in Colorado? Well, they're going to drop not just one, but THREE locations on the state.

Jason Scoby and his daughter Marilyn, the team bringing Capital Tacos to Colorado feel that the area has been lacking in flavorful Tex-Mex, and are eager to open up these franchised locations for Coloradans to experience it. Does that hurt anyone's feelings?
The restaurant chain has been around since their humble beginnings in 2013. Their first location in Land O' Lakes, Florida, didn't even have a sign. Since then, Capital Tacos has grown considerably and has taken home many awards.

It looks like the Scoby's are looking to start their Capital Tacos empire in the Boulder-Longmont area. We should see Florida's award-winning model of Tex-Mex opening in 2023.
