My eyes grew to the size of dinner plates, and my smile reached from ear to ear upon hearing news about The Fort Collins Brewery’s efforts to build a restaurant in their then-recent relocation to their bigger brewery on Lincoln last year. I waited on pins and needles for progress to speed up, because it was taking quite some time for a restauranteur to step up with “a vision” (so the Coloradoan reported). I toured the new brew house, walking by the wall of windows that surrounded an empty restaurant.

“When is the restaurant going to open?” I eagerly asked on the brew tour.

“We think we’ll be open early next summer,” the brew guide told us, as if many people had asked the same question on every tour since they moved into the building. I know I wasn’t the only one to be excited about it.

I had dreams of Fort Collins finally stepping up to the culinary plate and having a brewery bistro to brag about. Rumor had it that they were going to focus intensely on “Farm-to-Fork” cuisine. I thought with that kind of vision, Gravity Ten Twenty would certainly pave the way for other restaurants to focus on Northern Colorado produce. It was as if we were going to have our version of Stone Brewing’s World Bistro & Gardens – but you know, on a comfortable Fort Collins scale.

Months later, Gravity Ten Twenty opened on May 13, 2011. That grand opening was met with excitement and fanfare – it was the highlight of the summer for the Fort Collins food community. As with every other restaurant in town, readers flooded my inbox with feedback from their visits – both good and bad. After waiting a few months for them to get their opening jitters out of the way, I finally made it in to find out for myself.

My first visit was dinner with my friend Kent, who had recently moved to Boulder. We sat out on the patio, enjoying the beautiful pink and orange sunset that softly glowed over the golf course across the street. We drank delicious craft beers from the brewery while we looked over the menu, and my smile began to fade.

This was not really “Farm-to-Fork” cuisine…
