
Brighton May Have Colorado’s Best ‘Hidden Gem’ Pizza Spot
Thousands of Coloradans, if not more, enjoy pizza. Finding a great pizza restaurant in Colorado can be easy, but when you're looking for a buffet (with salad bar,) I think you need to get to Brighton.
Brighton, Colorado, Has a Great Little Bar & Grill with Pizza Buffet
Right in the heart of Brighton, near Highway 7 and Highway 85, you're going to find a corner bar: Copper Rail. It's been around since 2010 and one of the best things about the place is their brick-fired pizza.
Copper Rail Bar & Grill was started by two friends from Loveland. They named the bar after Copper Mountain and the railroad behind the establishment.
When I think of great pizza buffets, I flash back to when Pizza Huts had those great buffets, which have faded away. I also think about when Beau Jo's had a great buffet; alas, that also does not happen anymore.

That's why, when you see a place having a regular pizza buffet with a decent-sized salad bar along with it, you have to give them credit. I have been to Copper Rail on more than a few occasions; it's great.
Being very near the Highway 7 and Highway 85 interchange, it's a location that's easy to get to from the Denver area as well as Northern Colorado.

I would definitely call this little area, off of Bridge Street, a place to check out for some great food; there a more than a few restaurants in the area.
The Pizza Buffet at Copper Rail in Brighton
Monday through Friday 11:00- 2:00 p.m. you can get the lunch buffet (with salad bar) for $11.95 (I could spend more than that at Quizno's on one sandwich, let alone "all you can eat." It's also available every Tuesday night 5:00 p.m.-9:00 p.m. for $12.95.
