A gentleman who's served his Colorado communities as a law enforcement officer is also serving up tasty burgers in the Windsor/Fort Collins area as he begins easing into retirement.

It's only appropriate that this man's food truck would be named "Blue Line Burgers," as he's served most of his life as a police officer. I guess if I were to start a food truck after 30 years of being in radio, I might call it 'Frequency Falafels,' though, I know nothing about making them.

Smashburger Food Truck Based Out of Windsor Is a Hit

With our radio stations being at 600 Main in Downtown Windsor, we're very close to the American Legion; we've been over there several times for beers and whatnot. Since I follow them on Facebook, I was curious when I saw this new Blue Line Burgers truck was going to having its 'Grand Opening' there in March of 2026.

I started to follow Blue Line Burgers, and found that the truck, while only going for a few times by mid-April, had quite a following. They were selling out of their smashburgers wherever they went.

I'd gathered that a local law enforcement officer was involved but I couldn't find any more information; so, I reached out on Facebook to Blue Line Burgers for some background on the owner/operator, and he kindly obliged.

Jason Ehrhardt spent 25 with the Adams County Sheriff's Department as a police officer, a member of the SWAT team and eventually trained new recruits at the department's police academy.

Having moved to Windsor the same year as his retirement from Adams County, and having a former Adams County co-worker now on the Severance PD, he started working for the Severance PD.

With 30 Years of Police Work - What Would Retirement Hold?

2026 would mark 30 years of police under his belt, with a full retirement coming his way; with that, he began working on what he'd do to stay busy. A food truck had always been in the back of his mind, and with 2025, Jason began getting that off the ground. By February of 2026, he had his (customized) food truck.

He plans to work a little, here and there, until he officially retires; then, he'll put more time into it, with more weekly stops.
