A good Reuben can be surprisingly difficult to find. The problem is that there are many deli style sandwiches that can be sort of 'thrown together'. Ham and cheese isn't difficult. Make sure the quality ingredients are fresh and put it on the plate, right? There are a lot of simple sandwiches that rely on combination more than construction. Not the Reuben. The Reuben is all about timing and the right amount of Thousand Island.

Pauly’s Super Sauer Kraut Reuben

Ingredients

Deli Corned Beef – sliced thin – ¼ pound or so per sandwich

Sauer Kraut drained

American Cheese

Thousand Island/Russian Dressing

Fresh Rye Bread

The key to the Reuben is heating everything simultaneously and then getting it in front of those you’re serving while it is nice and hot!

Fry the corned beef and the sauer kraut in separate pans on medium heat. I heavily pepper the sauer kraut because I love what it does to the flavor. I actually just turn the corned beef once in a while and allow it to heat up. As the ingredients become hot I toast the bread and add the cheese to the corned beef to melt. As the bread is done pull it out and apply a good amount of Thousand Island! This is so simple, but it makes such a wonderful sandwich.

Serve with soda, chips and pickles.
