Welcome to the Bottomless Pit.  A name I heard a lot from my mother. I love food. I love to cook, but even more than that, I love to eat other people's food. Every week I'm going to head out and about around NoCo to eat some amazing food.

I most certainly did that yesterday. Ranking towards the top of my favorite foods list is Ribs. Some fall off the bone, sauce all over your face, eat like a caveman, ribs. I made my way to Downtown Fort Collins and stumbled upon Moe's Original Bar-B-Que.  Even though I have lived in Colorado for the past 13 years, I have never visited a Moe's before. I am now deeply regretting that decision. There are 10 Moe's locations throughout Denver, and 60 locations total (even one in Mexico City, Mexico).

Each store is privately owned and every owner works in their respective stores. I had the opportunity to chat with Owner/Operator of the Fort Collins location,Ted, after my lunch. A former fine dining chef from Vail who switched his culinary skill set to Bar-B-Que. I'm so glad he did.

These without a doubt, ranked as some of the best ribs I have ever had. I would have to say one of my favorite things about Moe's was there sauce. A unique bright orange sauce made in-house. A slight kick and a different flavor profile then some of your basic bbq sauces. The ribs truly were fall of the bone. If you like your sides, Moe's Original Bar-B-Que has you  covered. Cornbread, mac-n-cheese, collard greens, baked beans, and a rotating menu of daily specials. The ONLY negative I would say is that I didn't see french fries on the menu. I enjoy fries with my ribs.

If you are ever in Downtown Fort Collins and in the mood for some smoke meat, I could't recommend Moe's Original Bar-B-Que.  I rank them as a five, as in five minutes spent in the bathroom washing my face and hands to get all the sauce off because I absolutely tore into those ribs.
