Restaurants in Colorado come in all "shapes and sizes" as they say, serving all sorts of different menu items. One in Denver has been singled out as best "Hole-in-the-Wall" spot for the state.

Colorado's Best "Hole-in-the-Wall" Restaurant Has Been Open 20+ Years

I think most would agree that a place to be labeled as "Hole-in-the-Wall" it should have been around for more than a few years. This place in Denver, having opened in 2004, qualifies in that regard. When you add in the fact that it serves to a niche crowd, having survived so long is a testament to its quality.

In August of 2025, FoodRepublic.com, which deals with food industry news, top food trends, innovative recipes, cooking tips, dining advice, and drink recommendations, put out their list of the "Best Hole-in-the-Wall Restaurant in Your State;" listing a place near Spear and Colfax as Colorado's best.

Mediterranean Restaurant in Denver Named Colorado's Best 'Hole-in-the-Wall'

If you're a fan of gyros, hummus, and shawarma, Shish Kabob Grill has to be on your list of places to hit, as it's Colorado's Best Hole-in-the-Wall restaurant, according to FoodRepublic.com. Located at the corner of Grant and Colfax, right by the State Capitol, they've been around since 2004.

Praised for its hummus and kebabs, the local gem has earned a place in the hearts of many locals over the years.

When you look at their menu, Shish Kabob Grill has a great selection and very reasonable prices, as well. I'd say the next time you're paying a trip to the Mile High City, stop in.
