15 El Pollo Loco locations in Colorado would employ up to 750 Coloradans with nearly 50 in each El Pollo Loco location. Currently, there are 478 El Pollo Loco locations in Arizona, California, Nevada, Texas, Utah and Louisana. El Pollo Loco's plans are to expand to 140 new locations across the western part of the United States by 2026.

El Pollo Loco's menu highlight the fire-grilled chicken in their tostadas, their street tacos, bowls, burritos, the "world's first keto taco", and their $5 fire grilled combos. See the entire menu of El Pollo Loco HERE.

9 News says that the expansion of the food chain is fueled by two prototype designs. One of the designs offers no indoor dining, but instead offers catering, a take-out window, drive-thru capabilities, curbside pick-up and patio seating. The second prototype would be a small dine-in area with a large patio. The second prototype would also include two drive-thru's and curbside pick-up.
